Chewy Caramel Bars Recipe #Recipes #Baking

IMG_3131

I just made these earlier today and they are really good!  They really are chewy, the caramel is soft without sticking to your teeth and the crust is absolutely delicious.  The crust isn’t as sweet as the caramel top which is a great contrast so they aren’t overly sweet.  The dollops of the crust on top makes for an extra bit of crisp and contrast.  Absolutely yummy!  Check out the recipe below!

Ingredients
  1. 25 pieces (5.5 oz) Werther's Originals Chewy Caramels or Baking Caramels
  2. 1 Cup Butter
  3. 1/2 Cup Sugar
  4. 1/8 Teaspoon Salt
  5. 2 Cups All-Purpose Flour
  6. (1) 14 oz Can Sweetened Condensed Milk
  7. 1/2 Cup Chopped Walnuts, Peanuts or other nuts you may want to use (completely optional)
  8. 1/2 Teaspoon Vanilla Extract
Instructions
  1. Preheat oven to 350 degrees.
  2. For Crust - beat butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add the sugar and salt and beat until combined. You may have to scrape sides of bowl occasionally to make sure it is all mixing. Then beat in the flour on low speed until combined. Press two-thirds of the crust mixture into the bottom of a 13x9x2 inch baking pan (ungreased).
  3. Filling - combine sweetened condensed milk and caramels in medium saucepan and stir them over low heat until the mixture is smooth. You may have to continuously stir to keep the caramels from burning. Remove from heat and stir in nuts and vanilla. Or just the vanilla if you opted to leave the nuts out. Spread hot mixture over the crust you have in your pan.
  4. Since you only used two-thirds of the crust mixture for the crust, use the remaining crust mixture and dot the top.
  5. Bake for 30-35 minutes or until the crust is golden. Cool in the pan on a wire rack. Make sure you let cool completely before cutting into squares so that you have even squares and can cut them without it being too gooey.
  6. Makes one to two dozen depending on how big you cut the squares.
